Mix:
2 1/2 cups water
2 cups cubed, precooked chicken
1/2 onion cut in pieces
1/2 red (or green) pepper
1 can pineapple chunks and juice
3 tablespoons vinegar
3/4 cup brown sugar
3/4 teaspoon salt
Bring to a boil and cook for 15 minutes. Mix 3 tablespoons corn starch with 1/4 cup cold water and add to the boiling chicken mixture while stirring. Serve over cooked rice.
