Fry Bread (for Navajo Tacos or Scones)

Mix until smooth (I use the bread hook in my kitchenaid):

5 cups flour
3 tsp. salt
3 tsp. baking powder
2 cups warm water

Fry in hot oil in a shallow pan until lightly browned. Serve with traditional taco toppings, or serve with honey butter, cinnamon sugar, etc.

Peach Glace Pie

In medium sauce pan combine:

2 cups fresh peaches, peeled and sliced
1 cup water
1 cup sugar mixed with 3 tablespoons cornstarch

Stir over medium heat until sauce thickens and becomes clear.

Pour over 2 cups fresh, uncooked sliced peaches in prepared pie crust.

Peachy Fruit Leather

10 large Peaches, washed, pitted, and cut in half (I don't peel them)
1/3 C. sugar

In a large saucepan over medium-low heat, cook the peaches and the sugar until the peaches are tender (about 45 minutes). Let it cool a bit.

Meanwhile, prepare your pans. On two sheet pans, roll out heavy-duty plastic wrap (Stretch-tite is best). Spray with a little oil.

Puree the mixture in a blender or food processor until very smooth. With an offset spatula, spread the mixture over the prepared wrap to a thickness of about 1/4" (not too thick, not too thin). Try to spread the peach mixture as evenly as possible to allow for even drying.

Place the pans in an oven on the lowest setting (preferably below 175 degrees). Rotate the pans after a couple hours. May take about six hours to dry thoroughly.

The mixture is enough to make four sheet pans of leather. Store the remainder of the mixture in the refrigerator while the first batch dries.

Peach Yum

Combine:
¾ bag vanilla wafer cookies, crushed
4 T. melted butter
1/3 cup sugar

Press into bottom of 9x13 pan and chill in refrigerator

Mix and top crust with:
1 pint cream, whipped very stiff with vanilla and sugar to taste, or marshmallow cream to taste
As many fresh, peeled peaches as you want to cut up and add in (lots!)

Chill until served.

Sugar Cookies

2 cups white sugar
1 c shortening
3 eggs
1/4 cup milk
3 tsp vanilla
1 tsp lemon extract
1 tsp salt
3 tsp baking powder
5 cups flour

Cream shortening, sugar, eggs, milk, vanilla, lemon extract. Add dry ingredients. Roll out softball-sized amounts of dough between sheets of wax paper to about ¼ inch thick and cut with cookie cutters. Transfer to baking sheet. Bake at 350 for 8-10 minutes. Chill remaining dough in fridge and take out more to roll out as you go.

Frosting:

1/2 cup butter, softened
1-2 tsp vanilla
8 oz cream cheese
1 lb powdered sugar (about 4 cups)
Can add 1/2 tsp. lemon or almond extract

Pineapple Slush

Combine, pour into an empty milk jug or other gallon-size container, and freeze overnight:

12 ounce can orange juice concentrate
12 ounce can lemonade concentrate
46 ounces pineapple juice
4 cups sugar
6 cups water

When ready to serve, cut open the container and pour frozen slush into a large punch bowl. Add up to 4 liters of Sprite and break up slush a bit before serving.

Quick Hamburger Soup

1 pound ground beef, browned and drained
3-4 potatoes, peeled and chopped
canned or frozen green beans
canned or frozen corn
2 tablespoons dried minced onions
frozen mixed vegetables
15 ounces tomato juice
2 cans beef broth

Cook potatoes in beef broth. Add everything else and simmer. Add minute rice or pasta if desired.
